I don’t usually pay too much attention to all the special “holidays” devoted to foods, but when I heard Friday was National Rum Day I knew that celebration was in order!
I just bought a mint plant last week after seeing a recipe for Cherry Mojitos on Taste, Love, & Nourish, so the timing was perfect. Mojitos are one of my favorite summer drinks and the blueberries take them to another level entirely. These are the perfect way to extend summer just a bit longer!
I had to strain these because the flimsy paper straws would definitely not be able to handle blueberry pulp, but I would have probably left it otherwise. I must say after trying them out, I don’t entirely understand the paper straw craze. They look nice, but halfway through our drinks the straws were looking pretty pitiful…I think I’ll just stick the rest in a glass on the bar as decoration.
- 1 cup blueberries, plus more for garnish
- 4 ts sugar
- 12 sprigs of mint
- 8 oz white rum
- juice of two limes
- club soda
- Add blueberries, sugar, and mint leaves to a cocktail shaker. Use a muddler to extract the juice from the blueberries and muddle the mint. Add the lime juice and rum and shake to combine.
- Pour the combination into two glasses over ice.* Top off with desired amount of club soda and garnish with extra blueberries.
